Crema de coliflor y leche de coco

Just as coconut had its moment a few years ago, now it's cauliflower's turn to take center stage. Yes, the cauliflower we disliked so much as children is now appearing transformed into pizza bases, gnocchi, and soups so creamy we can't believe they're dairy-free.

This soup includes both trendy superfoods, making it not only an ideal soup to serve to the hipsters in your circle, but also nutritious, delicious, and super easy to make.

This Thai-inspired recipe is quick, inexpensive, and super healthy. It's packed with fiber, high in healthy fats, and all the nutrients of cauliflower, which are numerous. Plus, it's so creamy that it's easy to get kids to try it. I can't promise everyone will like it, but my 10- and 12-year-old daughters loved it and asked me to put it in their thermoses to take to school.

Cauliflower and coconut milk cream

For 4 people
Preparation time: 20 min
Difficulty: very easy
Notes: Vegan, GF, Paleo, Keto


Ingredients:

1 medium white onion

1 clove of garlic

2 splashes of olive oil or coconut oil

1 medium cauliflower

350 ml of coconut milk

250 ml of vegetable broth

1 teaspoon (5 g) of curry powder

2 generous pinches of salt, or to taste


As a side dish (optional)

Fresh chopped cilantro

1 teaspoon per person of red curry pâté


Preparation:

Chop the onion, garlic, and dice the cauliflower.

Place a pressure cooker over medium heat and, once hot, add a drizzle of oil, the onion, and the garlic. Sauté for a few minutes, then add the cauliflower. Sauté for a few more minutes and add the remaining ingredients. Close the pressure cooker, increase the heat, and allow it to reach maximum pressure.

Reduce the heat and cook for 10 minutes. Turn off the heat and allow the pressure to release completely. Open the pressure cooker and, using an immersion blender, blend until smooth and creamy.

Serve in individual bowls, add the garnish and enjoy
