Buckwheat and Banana Porridge: Gluten-free and delicious
Starting the day with a hot breakfast is comforting. If you choose a nutritious breakfast like this one, you'll have energy all morning.
Buckwheat is a pseudocereal that is gluten-free. It has a strong flavor, but once you get used to it, it's delicious.
Ingredients
- 1 part buckwheat kernels
- 3 parts water
- 1 ripe banana
- Cinnamon
- Maple syrup
Method
The night before, wash the buckwheat grains and leave them to soak.
In the morning, drain and rinse the beans and cook them in water over medium-high heat. Once it starts to boil, add the cinnamon, reduce the heat, and partially cover the pot.
When the grains are soft and creamy - about 10 minutes - remove from heat.
In a separate bowl, mash the banana and mix it with the cooked porridge. At this point, if you want the porridge to be creamier, you can add plant-based milk or a little more water and mix until it reaches the desired consistency.
Serve in individual bowls with a little maple syrup.
Note: This is a basic recipe that you can get creative with and customize to your liking. You can add toasted nuts, peanut butter, fresh fruit, or a little grated dark chocolate on top.
