In the summer months, refreshing drinks are appealing; this cold hibiscus infusion, inspired by Agua de Jamaica, a typical drink from Central America and the Caribbean, is delicious and very comforting.
Besides being delicious, this cold infusion is very healthy—especially if you drink it without sugar. Hibiscus is a great antioxidant, which is particularly beneficial during the summer months, and it can help lower blood pressure.

Hibiscus water

Ingredients:
2 tablespoons of hibiscus flowers or 2 hibiscus infusion bags
1 or 2 files
5 mint leaves
1 teaspoon of coconut sugar (optional)
Water

Method:
Boil 1/2 liter of water, remove from heat and add two tablespoons of dried hibiscus flowers, or make the infusion with two hibiscus tea bags/filters. Let it steep until the water is lukewarm.
Strain the flowers, keeping the infusion. Add the juice of half a lime and sugar, if using. You can add more of both, to taste. Mix well until the sugar is completely dissolved.
Add 1/2 liter of cold water and mix again.
Serve in individual glasses with plenty of ice and a slice of lime.
